Super Easy Crockpot Shredded Chicken


My friend gave me the basics for this recipe and it is one of my go tos! You can easily alter this to your liking by adding more spices or a marinade to it as well. It is a super simple, easy, and versatile recipe. Once the chicken is cooked and shredded you can use it in so many recipes, on salads, mixed with BBQ or made into Chicken Salad for sandwiches. The possibilities are endless and it is especially a great time saver if you meal prep! I like to make a big batch and freeze the extra for quick use later.

4-5lbs of Chicken (I use chicken breast for simplicity and lower fat content)
3 Cups Lemon Juice + a few splashes (Don’t freak out!! The chicken will not turn out super lemony!! The lemon juice just helps make it super tender and juicy!)
3 Tbls Montreal Chicken Seasoning
2 tsp Tony’s
2 tsp Garlic Powder
2 tsp Onion Powder
(My favorite add on: Add a packet of McCormick Island Woodfire Grill Seasoning. Once you try it this way you might never go back! It also adds a bit stronger flavor so keep that in mind if you are going to be using it in a recipe.)

-Mix dry seasonings together in small bowl
-Put the crockpot liner in (see tips below)
-Add two cups lemon juice
-Add a layer of chicken with minimal overlap
-Pour a half cup lemon juice over top of chicken and generously sprinkle with dry seasoning mix
-Layer the rest of the chicken on top
-Pour a half cup lemon juice over top of chicken and generously sprinkle with dry seasoning mix
-Cook on high for four hours
-Remove chicken (carefully as it should fall apart as you are pulling it out) and place in a mixing bowl
-Shred chicken - It should fall apart. I just use two forks to pull at it.
-Add 3-4 cups of the broth from the crockpot to the shredded chicken and mix together

Tips!
-I love to use a crock pot liner to make clean up extra easy. You can find my post here for my favorite liners and crock pot.
-I make big batches of these and freeze into meal or cooking portions to save time.
-You can use this chicken in just about any recipe that calls for chicken without the flavor coming through strongly. If you want to use different seasonings or stronger ones to have the flavor come through more you definitely can!
